Add some color to your meal with the beautiful flavors and textures of this salad. Bonus tip: if you want a nice slaw instead, leave the greens out and substitute the lemon vinaigrette for the maple vinaigrette.
Ingredients
- ½ head red cabbage, thinly sliced
- 1 small jicama, peeled and cubed
- 2 carrots, peeled and julienned
- 4-6 cups spring greens
- ¼ cup sunflower seeds
- Maple vinaigrette
Recipe
- Prepare the maple vinaigrette and set aside.
- In large bowl, combine red cabbage, jicama, carrot and spring greens. Toss thoroughly to distribute the ingredients evenly. Add the dressing, toss and top with sunflower seeds.
