# Red cabbage, jicama, carrot, greens, sunflower seeds

Add some color to your meal with the beautiful flavors and textures of this salad.  Bonus tip:  if you want a nice slaw instead, leave the greens out and substitute the lemon vinaigrette for the maple vinaigrette.

Ingredients

  • ½ head red cabbage, thinly sliced
  • 1 small jicama, peeled and cubed
  • 2 carrots, peeled and julienned
  • 4-6 cups spring greens
  • ¼ cup sunflower seeds
  • Maple vinaigrette

Recipe

  1. Prepare the maple vinaigrette and set aside.
  2. In large bowl, combine red cabbage, jicama, carrot and spring greens. Toss thoroughly to distribute the ingredients evenly. Add the dressing, toss and top with sunflower seeds.
