# Kale, red pepper, edamame, carrot, cilantro

This vibrant and colorful salad is great as a main dish or a side dish to your favorite Asian-inspired meal. You can also consider adding avocado, red cabbage, snap peas or basil to the mix. Just don’t forget the soy-ginger vinaigrette!

Ingredients

  • 1 bunch Lacinato kale, finely chopped
  • 1 red pepper, chopped
  • 1 cup shelled cooked edamame, thawed if frozen
  • 2 carrots, grated
  • ¼ cup cilantro, finely chopped
  • Soy-ginger vinaigrette

Recipe

  1. Prepare soy-ginger vinaigrette and set aside.
  2. Combine kale, red pepper, edamame, cart and cilantro. Toss with soy-ginger vinaigrette.
