This vibrant and colorful salad is great as a main dish or a side dish to your favorite Asian-inspired meal. You can also consider adding avocado, red cabbage, snap peas or basil to the mix. Just don’t forget the soy-ginger vinaigrette!
Ingredients
- 1 bunch Lacinato kale, finely chopped
- 1 red pepper, chopped
- 1 cup shelled cooked edamame, thawed if frozen
- 2 carrots, grated
- ¼ cup cilantro, finely chopped
- Soy-ginger vinaigrette
Recipe
- Prepare soy-ginger vinaigrette and set aside.
- Combine kale, red pepper, edamame, cart and cilantro. Toss with soy-ginger vinaigrette.
