# Grilled radicchio, Parmesan

Next time you are grilling, why not grill your salad, too? Charred on the outside and crisp on the inside, grilled radicchio has a great nutty flavor and won’t disappoint.

Ingredients

  • 2 large heads radicchio, halved lengthwise through stem end
  • 2 tablespoons olive oil
  • ¼ teaspoon sea salt
  • Freshly ground pepper
  • Mustard Vinaigrette
  • Parmesan, shaved

Recipe

  1. Light or heat up the grill.
  2. Coat the radicchios halves with olive oil and sea salt. Once grill is ready, put the halves cut side down, cover and cook for 2 to 3 minutes. Once outer leaves are browned, remove from heat an let cool.
  3. Once cooled, thinly slice radicchios and place in a large bowl.  Dress with the mustard vinaigrette. Top with Parmesan.
