Next time you are grilling, why not grill your salad, too? Charred on the outside and crisp on the inside, grilled radicchio has a great nutty flavor and won’t disappoint.
Ingredients
- 2 large heads radicchio, halved lengthwise through stem end
- 2 tablespoons olive oil
- ¼ teaspoon sea salt
- Freshly ground pepper
- Mustard Vinaigrette
- Parmesan, shaved
Recipe
- Light or heat up the grill.
- Coat the radicchios halves with olive oil and sea salt. Once grill is ready, put the halves cut side down, cover and cook for 2 to 3 minutes. Once outer leaves are browned, remove from heat an let cool.
- Once cooled, thinly slice radicchios and place in a large bowl. Dress with the mustard vinaigrette. Top with Parmesan.
